Mardi Gras King Cake (makes 2 cakes, about 12 servings each)

Recipe Ingredients for King Cake

3/4 cup unsalted butter (divided, 1/4 cup is melted)
2/3 cup evaporated milk
1/3 cup sugar
2 tsp. salt
2 tbsp sugar
1 oz (2 envelopes) dried yeast
1/3 cup warm water
4 eggs
1 tbs. grated lemon rind
4 1/2 cups flour
1/2 cup brown sugar
3/4 cup granulated sugar
1 tbsp cinnamon
1 cup chopped pecans
16 oz (2 eight oz. packages) of cream cheese
1 1/2 cups sugar

Recipe Directions for King Cake

  1. First 4 Ingredients: In a small pot, place 1/2 cup of butter, evaporated milk, sugar and salt. Over low heat, melt stirring occasionally. Allow mixture to cool until lukewarm.

  2. Next 6 Ingredients: In large mixing bowl, combine 2 tablespoons sugar, yeast, and warm water. Let stand until foamy, about five to ten minutes. Beat eggs into the foamy yeast and then add the cooled milk mixture and lemon rind. Stir in 4 cups of flour cup at a time, reserving the rest for the kneading surface.

  3. Knead dough five to ten minutes until it is smooth. Place in greased mixing bowl and turn it over so top is greased. Cover with a clean cloth and let rise in a warm place until doubled in size, about one and a half to two hours.

  4. Next 4 Ingredients: SUGAR & CINNAMON FILLING

  5. Blend together brown sugar, granulated sugar, cinnamon and pecans (optional) and set aside

  6. Last 2 Ingredients: CREAM CHEESE FILLING

  7. Mix cream cheese and sugar until creamy. If you use this filling, you can add it on top of the cinnamon filling or just use it alone. You could add sliced fresh fruit or pecans on top of it, too. We spread the filling on the rolled out strips and just rolled it up and it was wonderful.

  8. When dough is double, punch it down and divide in half. On a floured surface roll one of the halfs into a rectangle 30? by 15?. Brush with stick melted butter and cut into 3 lengthwise strips. Sprinkle of the sugar mixture on strips, leaving a 1? lengthwise strip for sealing. Fold each strip lengthwise toward the center, sealing the seam.

  9. You now have three 30? strips with sugar mixture enclosed in each. Braid the three strips and make a circle by joining the ends. Repeat with the other of the dough. Place each cake on a 10? by 15? baking sheet, cover with a damp cloth and let rise an hour. When doubled, brush each cake with beaten egg, and sprinkle the top with colored sugar. Bake in a pre-heated 350 degree oven for 20minutes. Remove pan immediately and place one bean or pecan half or cookable baby in each from underneath.

  10. To seal seam, moisten one edge with water. It sticks better.
