Recipe Ingredients for Kindals Banana Blueberry Muffins with Bran

1 cup cake flour
1/2 cup all bran
1/2 c oats, dry
1/4 cup light brown sugar, firmly packed
1 tbsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp allspice
1 medium banana
4 oz plain yogurt
1/2 c egg substitute
1 tbsp canola oil
1 cup blueberries
1 T lemon zest
1 T vanilla extract
1/4 c molasses
1/2 tsp baking soda

Recipe Directions for Kindals Banana Blueberry Muffins with Bran

  1. Preheat oven to 400. Combine flour, oatmeal, bran, brown sugar, baking powder, spices. Stirring well.

  2. In small bowl, mash banana's. Add remaining ingredients except blueberries. Whisk until well blended.

  3. Make well in center of flour mixture. Pour banana mixture into well and stir just until moist - Mixuture should be lumpy.

  4. Carefully fold blueberries into batter don't over mix. Pour batter into muffin cups or tin. If not paper cups then spray the tin with pam.

  5. Bake 15 minutes or until toothpick inserted in center comes out clean.
