Recipe Ingredients for Kim's Pumpkin Soup

2 tbsp olive oil
2 tbsp margarine
1 1/2 tbsp garlic
29 oz canned pumpkin
1 medium onion
1 tsp ginger
3 cups low sodium chicken broth
3/4 cup fat free milk
1 tsp pepper
1/2 tsp nutmeg
1 tsp cinnamon
1/2 tsp salt
1/2 tsp red pepper flakes
4 tbsp brown sugar

Recipe Directions for Kim's Pumpkin Soup

  1. Cook onion and garlic in olive oil and butter

  2. Add broth and pumpkin

  3. Add spices

  4. Add milk

  5. Puree in blender

  6. Garnish with parmesan and green onions if you want
