Recipe Ingredients for Kim's Greek Pasta

1/2 cucumber
3 1/2 oz light sour cream 127613
7 oz greek yogurt 108279 (2% fage whole 7oz cup)
2 t garlic
1/2 t salt
1/2 t pepper
2 t dill
327 g ground lamb (this is yield 1 lb raw)
6 5/8 oz whole wheat blend penne rigate pasta 142758 (this is about half a box of Ronzoni's Healthy Harvest Whole Wheat Blend Penne Riga
5 oz frozen spinach (roughly half a box - can be thawed while browning meat in microwave with paper towels)
1 oz reduced fat feta
3 t oregano
2 t mint
2 t thyme
1 t marjoram
1 t onion (dehydrated)
1 t garlic powder
7 roma tomatoes

Recipe Directions for Kim's Greek Pasta

  1. Peel and de-seed the cucumber and process and drain liquid (this part can be omitted completely)

  2. Mix cucumber (or not, if omitted), sour cream, yogurt, salt, pepper, crushed garlic and dill together and refrigerate the night before to make the tzatziki sauce.

  3. Cook pasta and drain

  4. Brown lamb while pasta is cooking then drain any excess fat

  5. Spinach can be thawed the night before - or in the microwave while meat is cooking - squeeze the heck out of it with paper towels to drain.

  6. Reduce heat to low, mix in 5 oz drained and thawed chopped spinach, remaining spices, and 1oz crumbled feta

  7. Once heated and feta has melted, mix in pre made tzatziki sauce and drained pasta

  8. 1 serving is almost a full bowl and topped with 1 diced roma tomato
