270 cal per 258g (about 1 cup) serving A grade, 33 carb, 10g fiber, 27g protein 2.5g fat, made in the crockpot, very filling makes about 15 servings. The numbers after some ingredients is there because that's what I used to analyze, feel free to alter. Do not omit the chipotle peppers in adobo! If you don't want it spicy, you need to cut the peppers open (like 5 in the can?) and remove the seeds! Without seeds it is child appropriate spicy, with the seeds, its hot!

Recipe Ingredients for Kim's Crockpot Chicken Chili

1 3/4 lb chicken breast
42 oz canned diced tomatoes 11885
1 sweet onion, medium
1 green pepper, medium
2 cloves garlic
1 lb great northern beans 16024, raw
1/2 lb red beans, raw
4 tsp chicken bouillon granules
2 t oregano
1 t coriander
1 t cumin
1 t paprika
1 t chili powder
1 t salt
1 t pepper
4 cups water

Recipe Directions for Kim's Crockpot Chicken Chili

  1. Cut onion, bell pepper, and garlic into small pieces and place in food processor with 1 can chipotle peppers in adobo sauce (7.5oz can this adds approx 10cal per servings, sold in spanish food section of most grocery stores) process until very finely chopped and pour into crock pot.

  2. Add raw dry beans to crockpot.

  3. Add canned, diced tomatoes.

  4. Add all dry seasonings.

  5. Mix well.

  6. Add chicken.

  7. Add 4 cups water.If you have room left, you can add another cup.

  8. Cook on low 10 hours.

  9. Use a spoon to stir and shred the chicken.
