Recipe Ingredients for Kim's Black Bean Burgers

32 oz black beans
1 sweet pepper
1 onion
2 cloves garlic
1 jalapeno pepper
15 oz corn
2 eggs
1 tbsp chili powder
1 tbsp cumin
2 tbsp fresh rosemary
2 tbsp fresh cilantro
1 tbsp oregano
1 1/2 cups bread crumbs
4 whole mushrooms, baby bella

Recipe Directions for Kim's Black Bean Burgers

  1. Saute dice onion and sweet peppers in a skillet with 2 tablepoons olive oil. After a few minutes add garlic and continue cooking until translucent.

  2. Mash the black beans in a food processor or Magic Bullet, and pour into large mixing bowl.

  3. Add the sauteed vegetable mixture and stir. Add the remaining ingredients and mix well.

  4. Shape into 12 patties. Patties can be fried in the same pan you sauteed the vegetables in, or grilled on aluminum foil on the grill, or even broiled in the oven.
