Recipe Ingredients for Kim's Bean Soup

32 oz beans, dry
32 oz vegetable broth
2 cups picante sauce
1 cup broccoli
2 stalks celery
1 onion
2 cloves garlic
6 baby carrots
2 teaspoons oregano

Recipe Directions for Kim's Bean Soup

  1. Soak the beans overnight.

  2. Drain and rinse before returning to pan and adding vegetable broth and picante sauce. Cook celery, onion, garlic and carrots in skillet with a little water and cook until tender.

  3. Add everything to pot and bring to near boil. Reduce heat and allow soup to simmer for at least an hour. The longer the better!
