A Level 1 Prisim Friendly Recipe. Reheats well.

Recipe Ingredients for Kimkins

2 zucchini, grated and squeezed dry
1 t. garlic, minced
4 T. onion, grated
1 green onion, minced
1 egg, well beaten
1/2 t. salt
1/2 t. pepper
1 t. tabasco
1 Pam cooking spray

Recipe Directions for Kimkins

  1. Mix all ingredients well.

  2. Let set for a few minutes to allow flavors to mingle.

  3. Heat nonstick skillet on medium.

  4. Spray with Pam (or wipe with olive oil on a napkin)

  5. Drop zucchini in skillet and flatten a bit.

  6. Cook until lightly browned (5 to 6 minutes).

  7. Flip and cook 3-4 minutes on reverse.
