A Korean favorite imported to Japan, this recipe was modified from one in Japanese on the Kikkoman website.

Recipe Ingredients for Kimchi Chahan (Kimchi fried rice, Japanese-style)

1 egg
4 oz kimchi, chopped (1/2 cup)
4 medium slices bacon, cubed (or pork) (optional)
1 onion, diced
1 clove garlic, diced
3 tablespoons vegetable oil
2 tablespoons soy sauce
2 cups rice, cooked
4 scallions, diced (optional)
1 black pepper

Recipe Directions for Kimchi Chahan (Kimchi fried rice, Japanese-style)

  1. Cook 1 cup dry rice (2 cups cooked) or use leftovers. (You can use more or less rice to adjust portion size and flavor.) When rice is cooked, mix it with a raw egg and set aside. Alternatively, you can scramble the egg beforehand, and set aside to add later for a more Chinese style fried rice).

  2. Dice onions and sauté in vegetable oil until soft and slightly translucent.

  3. Add garlic and sauté briefly.

  4. Add bacon and cook until half cooked.

  5. Add kimchi and sauté until it begins to soften (a few minutes).

  6. Add rice and egg mixture, soy sauce, and black black pepper. Stir constantly until the texture seems less "wet" (meaning the egg has cooked).

  7. Serve. Top with diced scallions, or a lightly fried egg (both optional).
