A mixture of chicken, eggs, bread crumbs, onion, parsley and light seasoning make croquettes you'll go crazy for! I found a few recipes and combined them lowering the sodium, fat and cholestrol

Recipe Ingredients for (KII) Chicken Croquettes

4 ounces chicken
1 medium potato
1/4 cup seasoned dry bread crumbs
1/2 cup egg beater
1/3 cup onion
1/2 teaspoon parsley
1/4 cup cornstarch
1 tbsp 2% lowfat milk
1 tsp worcestershire
1/8 teaspoon ground black pepper

Recipe Directions for (KII) Chicken Croquettes

  1. Mince the chicken and marinate in worcestershire with pepper.

  2. Boil the potato. Once done, mash potato.

  3. In a non-stick pan, stir-fry the chicken with some pam, making sure it separates.

  4. Add the milk to the potatoes until mixture is moist.

  5. Mix in the chicken. The consistency should be firm enough to shape into patties.

  6. Roll the patties in the cornstarch, then dip in egg beater and cover in breadcrumbs.

  7. Fry in oil until golden on both sides.
