Recipe Ingredients for Kielbasa in Healthy Veggie Sauce

1 medium (2-1/2" dia) Onions
1 oz Oregano
1/2 tsp Thyme, Fresh
1/4 cup leaves, whole Basil, Fresh
2 medium Squash, Summer, Zucchini, Includes Skin
1 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
7 serving Fully Cooked Lean Turkey Kielbasa
5 tomato Tomatoes, Red, Ripe
1 1tsp Olive Oil

Recipe Directions for Kielbasa in Healthy Veggie Sauce

Select a tall non-stick pot. Dice onion and saute in oil until transparent. Chop zucchini, pepper, and tomatos and add to pot. Cover and allow to come to a simmer. Meanwhile, chop herbs and add them to the pot. Allow the pot to simmer, stir on occasion. when the pepper and zucchini are are tender (I like judge by the zucchini changing color to almost transparent) slice the kielbasa and add it to the pot. Simmer 10 -12 minutes and serve. Enjoy!
