I am trying this lasagna because I can't get my kids to eat anything with ricotta, but they love cottage cheese. I tried to make it a little healthier by cutting back on noodles and mozarella.

Recipe Ingredients for kid's lasagna

8 oz. lasagna noodles
2 c. Newman's Own Marinara
8 oz. shredded mozarella cheese
2 oz. shredded parmesan
4 links chicken sausage
1 egg
2 c. fat-free cottage cheese

Recipe Directions for kid's lasagna

  1. Boil noodles to al dente.

  2. Add a little sauce on bottom of 8X8 pan.

  3. Mix ricotta, parmesan, egg, and any Italian herbs and spices you like.

  4. Cut up sausage and add to sauce.

  5. Layer noodles, ricotta mix, sauce, and mozarella.

  6. Repeat twice.

  7. Bake at 350 for 50-60 minutes.
