Recipe Ingredients for Kidney Kookies

1 cup white kidney beans, cooked
2 tbsp wheat bran
1/2 cup skim milk
4 tbsp skim milk
2/3 cup margarine spread, soft
1 1/2 cups whole wheat flour
1 cup splenda
2/3 cup cocoa, unsweetened
2 eggs
4 tsp vanilla extract
1 tsp baking soda

Recipe Directions for Kidney Kookies

  1. Preheat oven to 375F

  2. Put the white kidney beans, wheat bran, and 5 tbsp skim milk into a food processor and puree until well blended. Set aside.

  3. In a large bowl, beat the margarine, flour, spenda, bean puree, cocoa powder the remaining skim milk, egg, vanilla and baking soda until combined.

  4. Drop the batter by tablespoons onto a baking street lined with parchment paper. Bake until firm ton the touch, about 10 minutes. Cool on rack.
