Recipe Ingredients for Kidney beans and Sausage Casserole

4 link Aidelles Cajun Style Andouille, diced
2 tbsp olive oil
4 cloves garlic, minced
1 medium onion, diced
3 bell peppers, any color, chopped
1 cup eggplant, diced
2 cups mushrooms, sliced
1 can red kidney beans, drained
1 3/4 cup (1 can) peeled diced tomatoes, drained
1 1/2 cups classico spicy red pepper sauce
8 ounces whole wheat rotini or ziti pasta
10 ounces 2% Milk Reduced Fat - Mild Cheddar

Recipe Directions for Kidney beans and Sausage Casserole

  1. Preheat oven to 370 F.

  2. Cook garlic and onion in 1 tbsp olive oil until soft.

  3. Toss peppers, eggplant, and mushrooms in remaining olive oil and add to onions and garlic. Cook until soft.

  4. Add diced sausages, kidney beans, diced tomatoes, and pasta sauce to vegetables.

  5. Boil pasta to al-dente texture and stir into vegetable and sausage mixture.

  6. Spray casserole dish with cooking spray and transfer entire mixture to dish. Top with cheese and bake at 350F for 45-60 minutes.

  7. Cool for 5 to 10 minutes before serving.
