A red kidney bean and vegetable stew with Mediterranean spices (Sept 2012)

Recipe Ingredients for Kidney bean stew

3/4 cups red kidney beans
3 stalk broccoli
1 large green pepper
1 large onion
1 leek
250 ml diced tomatoes, no salt
1 cup frozen peas
100 g spinach
2 teaspoon olive oil
1/4 teaspoon paprika
1/4 teaspoon cumin
1/4 teaspoon salt
4 cups water

Recipe Directions for Kidney bean stew

  1. Boil red kidney beans for 90 minutes

  2. Sautee the green pepper, onion and leek

  3. Add the sauteed vegetables, other vegetables, and spices to the kidney beans, and boil an additional 30 minutes.
