0.25 cup Dark Red Kidney Beans
0.25 cup Rice, Brown, Medium-grain, Cooked
1 small whole (2-2/5" dia) Tomatoes, Red, Ripe
1 stalk, small (5" long) Celery
0.25 cup kernels Corn, Sweet, Yellow
1 cup Arugula
2 tbsp Chipotle Salsa

Recipe Directions for Kidney Bean & Roasted Corn Salad

Heat precooked rice and beans. Chop and add veggies. Defrost frozen roasted corn under warm water. Top with salsa.
