Kicked-up version of an old favorite.

Recipe Ingredients for Kicked-up Minestrone Soup (Grade A)

10 cups water
16 oz canned tomatoes
4 oz pasta shells
1/2 cup white beans
1/2 cup kidney beans
3/4 cup pinto beans
2 medium potatoes, chopped
1 1/2 cups shredded carrots
1/2 cup chopped bell pepper
3/4 cup chopped onion
2 cloves garlic, minced
1 tbsp oregano, fresh
3 tbsp olive oil, extra virgin
1 tbsp hot sauce
1 tbsp salt
1 tsp pepper

Recipe Directions for Kicked-up Minestrone Soup (Grade A)

  1. Put all ingredients in a large pot and bring to a boil.

  2. Turn heat down and let simmer for 30-45 min.

  3. Enjoy.
