Recipe Ingredients for Kick-start vegetable soup

2 liters chicken stock
1200 g tomatoes
400 g celery
2 cups water
120 g green capsicum
150 g carrot
100 g spring onion

Recipe Directions for Kick-start vegetable soup

  1. Dice all the ingredients and throw them into a large pot. You may want to substitute some of the tomatoes for canned crushed tomatoes.

  2. Pour all the chicken stock in, followed by the 2 cups of water.

  3. Hard boil the soup for two minutes, then let it simmer until all the vegetables are nice and tender.
