Thai chicken curry with potatoes and onion

Recipe Ingredients for Khang Karee Gai

3 cup coconut milk
1 1/2 lb lean chicken, cut into small pieces
1 med. onion, chunked for flavor
3 med. potatoes, cubed
5 tsp Curry Paste
16 oz. water
1 tsp. garam masala
1 tsp. soy sauce

Recipe Directions for Khang Karee Gai

Heat 1 cup of coconut milk in pot with curry paste. Add chicken once the oils in the paste are separating. Cook chicken until done and then add the rest of the ingredients. Let simmer until potatoes are tender. Add spices to taste. Some like it without soy sauce but I think it is too sweet without soy sauce.
