This dense tofu cheesecake is big on flavor and high in soy protein ! Low fat and low sugar make it perfect for an energizing breakfast, nutritious snack or indulgent dessert.

Recipe Ingredients for Key Lime Tofu Cheesecake

1 c. bran flakes
3/4 c. rolled oats
2 T. vegetable oil
800 g firm tofu (2 blocks)
2 egg whites
1/4 c. lime juice
1 t. lime zest
1 t. vanilla
1 t. lemon extract,
1/4 c sugar
4 oz Neufchatel (1/2 block)

Recipe Directions for Key Lime Tofu Cheesecake

  1. For crust, pulse first 3 ingredients in food processor. Press into bottom of medium springform pan.

  2. For filling, beat together the remaining ingredients until smooth.

  3. Pour onto crust and bake for about 1 hour at 350 degrees, or until middle is set. Cool to room temperature, then refrigerate for at least 1 hour.
