Lower fat but just as yummy authentic key lime taste in a just-right serving size...plus you can make them in a muffin tin!

Recipe Ingredients for Key Lime Pie Tartlets

10 graham crackers
2 tbs icbinb (or other margarine spread, melted)
1 egg white
14 oz condensed milk
2 egg yolks
1/2 cup eggbeaters
1/2 cup lime juice
24 tbs Fat-Free Reddi-wip

Recipe Directions for Key Lime Pie Tartlets

  1. Preheat oven to 350 F

  2. Crush graham crackers into fine crumbs and mix with fork with melted, cooled margarine and egg white. Divide equally between 12 paper-lined muffin cups and pack down well. Bake for 10 minutes and set aside to cool.

  3. Whisk together condensed milk, eggbeaters and yolks in a bowl until combined well. Add juice and whisk until combined well.

  4. Divide fill among cups and bake in middle of oven for 10 minutes. Cool completely and remove from muffin tin (filling will set as it cools), then chill, covered, at least 3 hours.

  5. Just before serving, remove each tart from it's paper and top with 2 tbs whipped cream (grated lime zest is also really nice here too)
