Mini Key Lime Cupcakes - really tasty

Recipe Ingredients for Key Lime Cupcakes

1/2 cup of butter, room temperature
1 cup of sugar
3 eggs, room temperature
1 cup of milk
1 cup of flour
1 1/2 cups of graham cracker crumbs
1 teaspoon of baking soda
1 teaspoon of baking powder
1/8 teaspoon of salt
1/4 cup lime juice
1/2 cup whipping cream
6 oz sweetened condensed milk

Recipe Directions for Key Lime Cupcakes

  1. Cream butter. Add sugar and beat til fluffy.

  2. Beat in eggs, one at a time.

  3. Sift together flour, crumbs, soda, powder and salt.

  4. Alternately add dry ingredients and milk until mixed.

  5. Bake in mini muffin tins for about 15 minutes at 350. toothpick should come out clean. Cool on wire rack. Frost with key lime whipped cream.

  6. Mix lime juice and condensed milk. Beat whipped cream and then add enough of the lime/condensed milk to taste.

  7. Frost cupcakes.
