Recipe Ingredients for Kevin's Red Sauce

1 cup green bell pepper, chopped
1/2 cup scallions, chopped
1/2 cup roasted red pepper, chopped
14 1/2 oz diced tomatoes
28 oz crushed tomatoes
1 fl oz lime juice
2 tbsp olive oil
1/4 cup cooking sherry
4 cloves fresh garlic
1/2 tsp ground sage
1 tsp garlic powder
1/2 tsp ground coriander
1/2 tsp oregano leaves
1/4 tsp basil leaves
1 tbsp sugar
1/4 tsp kosher salt
1/4 tsp ground black pepper

Recipe Directions for Kevin's Red Sauce

  1. heat oil in saucier

  2. sweat scallions and garlic

  3. add green peppers; saute

  4. add roasted red peppers; saute

  5. add sherry; allow to simmer for a few minutes

  6. add tomatoes and rest of ingredients; turn heat down to low. simmer a while

  7. salt and pepper to taste
