based on my usual recipe, just using whatever i had lying around

Recipe Ingredients for Kevin's Improvised Pepper Soup

2 c red onion, chopped
6 tbsp shallots, chopped
1 c roasted red peppers, in pieces
3 medium red potatoes, quartered
5 cloves garlic, minced
1 c
4 c organic vegetable broth
1/2 c cooking sherry
2 tbsp lemon juice
1 c 1% milk, hot
1/4 c unsalted butter

Recipe Directions for Kevin's Improvised Pepper Soup

  1. sweat onions in a little olive oil in a large saucepan

  2. add shallots and garlic and wait a minute

  3. add sherry and wait a minute or two

  4. add peppers, potatoes, and tomatoes (brine and all), then add the broth and lemon juice; cook over medium-high heat until the potatoes are tender

  5. heat the milk and butter, then add to the soup, stirring in

  6. use a blending wand or food processor to puree; spice, season & serve.
