Recipe Ingredients for Keri's Vegetable Pasta Bake

5 cups pasta sauce
13 1/4 oz penne or rotini, whole wheat
1 cup 2% cottage cheese
1 cup part-skim ricotta cheese
2 cups eggplant, diced
2 cups zucchini, diced
1 cup mushrooms, sliced
1/2 vidalia onion
4 cloves garlic, minced
1 cup mozzarella, shredded
1 pound turkey sausage
2 tbsp parmesan cheese

Recipe Directions for Keri's Vegetable Pasta Bake

  1. Preheat oven to 350 degrees.

  2. Cook pasta al dente.

  3. Cook sausage (and slice if using links).

  4. Saute garlic, onions, zucchini, eggplant and mushrooms.

  5. Mix together cottage cheese, riccota and 2 tsp italian spices.

  6. Spray 9x13 pan with cooking spray. Layer half of of each item -sauce, noodles, cheese mixture, and sausage, then repeat. Top with mozzarella.

  7. Spray aluminum foil with pan spray, place over 9x13 pan and put in oven for 30-45 minutes.
