Recipe Ingredients for Kerela Stuffed Brinjal

8 tbsp Sunflower Oil
1 g Cloves, Ground, use 8 whole gloves
8 black peppercorns
2 tbsp coriander seeds
2 large onions, sliced
150 g desiccated coconut
8 eggplant, small bringal variety
4 tbsp coriander leaves, fresh chopped
1 tsp Turmeric powder
1 tsp chilli powder
1 tsp tamarind paste
4 tbsp cashew nuts
1/2 tsp sugar
2/5 g salt

Recipe Directions for Kerela Stuffed Brinjal

  1. Partially slit each eggplant length wise (2 cuts) into 4 segments leaving the stalk to keep the segments attached.

  2. Heat 2 tbsp of oil, add coriander seeds, cloves and pepper corns. Fry 1 minute then add sliced onions and fry until golden brown.

  3. Add coconut and stir until coconut browns, remove from heat, cool and grind to a paste. Adding a little water if required.

  4. Mixed paste with remaining ingredients (except last tbsp of oil) and stuff egg plants.

  5. Heat remaining oil until it smokes and add each stuffed eggplant. Cover and cook on low heat to avoid burning until eggplants are cooked through; about 40 minutes. Add a little water if necessary to prevent burning.
