South Indian Coconut Chicken Curry

Recipe Ingredients for Kerala Stew

200 g chicken breast
250 g butter beans
250 g onion
50 g chilies
500 g potatoes
500 ml coconut milk
2 tbsp olive oil

Recipe Directions for Kerala Stew

  1. Fry cloves, cardamom, cinnamon and peppercorns in oil

  2. Add onions and ginger

  3. Add rest of the ingredients

  4. Simmer for 20 mins or until potatoes and chicken are tender

  5. Add juice of half a lemon and some curry leaves

  6. Serve with rice
