This came from a blog "breadispain.com" and because of the light use of cheese is relatively low cal. The taste is divine - thus the name "a slice of heaven" fits perfectly - probably the best I've ever had and I used to own a "pizza" restaurant. Non- traditional, but so good!

Recipe Ingredients for Kenny's Pizza

1 tablespoon yeast
1 3/4 cups warm water
1 teaspoon sugar
1 tablespoon honey
2 tablespoons extra virgin olive oil
1/2 teaspoon salt
3 cups flour
1 cup whole wheat flour
2 tablespoons balsamic vinegar
2 tablespoons extra virgin olive oil
2 tablespoons honey
1 tablespoon toasted sesame seeds
8 cloves garlic
1/8 lb bacon
1 sliced Roma tomato
1/2 cup of fresh basil
3 tablespoons pesto
6 ounces sliced part-skim mozzarella cheese
3 tablespoons parmesan

Recipe Directions for Kenny's Pizza

  1. Combine the yeast, water and sugar in a large bowl and let proof until foamy.

  2. Stir in the honey, olive oil and salt.

  3. Sift together the flours and gradually incorporate into the liquid until you have a soft, slightly sticky dough.

  4. Turn the dough out onto a lightly floured surface and knead.

  5. Knead until it?s apparent that strands of gluten are developing, or use a dough hook and processor for about 5 minutes.

  6. Transfer the dough to a lightly oiled bowl and cover with a clean cloth.

  7. Put in a warm place and allow to rise until doubled in size, which will take about an hour.

  8. Punch down and divide the dough into two approximately equal pieces.

  9. Form each piece into a ball, then, on a lightly floured surface, flatten to make a disk, then roll out to a uniform thickness of no greater than half an inch. Dust the bottom of two baking sheets or pizza pans with a little flour and lay the dough on top.

  10. Allow the dough to rise again for half an hour if you would like a chewier crust.

  11. Preheat your oven to its hottest temperature, say 500 degrees.

  12. Combine the reduced balsamic vinegar, olive oil, honey and sesame seeds.

  13. Brush this evenly over the dough.

  14. Layer cloves of roasted garlic, crisp bacon, slices of tomato and basil on top of the dough.

  15. Drizzle it with the sun dried tomatoe pesto, and top with slices of the mozzarella and a sprinkle of parmesan.

  16. Transfer the pizza to the oven and bake until the cheese begins to melt and the crust begins to poof up, about 10 minutes.

  17. If the crust still feels doughy, put it back in for a few more minutes.
