If you like chicken pot pie then this is the dish for you. Very filling, loaded with veggies and no greasy pie crust! Bon Appetit! :)

Recipe Ingredients for Kel's Chicken Veggie Bowl

12 oz Chicken Breast, Meat Only
750 g mixed vegetables
1/2 cup Milk, Nonfat
20 oz 98% Fat Free Cream of Mushroom Soup

Recipe Directions for Kel's Chicken Veggie Bowl

  1. Boil chicken breasts 15 to 20 minutes in a large pot full of water. Once cooked, drain water and allow chicken to cool. (Rinse or soak in cold water to speed up the process, if desired, but no water should be remaining in the pot when you continue.) Cut chicken in to half inch sized cubes and put them in the empty pot.

  2. Pour in a 750g bag of frozen veggies. (I used a Parisian style blend with broccoli, green beans, mushrooms, onions, carrots and yellow carrots).

  3. Add two 10oz cans of Campbell's 98% fat free (condensed) cream of mushroom soup.

  4. Add 1/2 cup of fat free milk and stir everything together.

  5. Heat on low heat for approximately half an hour. Do not heat it too quickly as it will scorch relatively easy. Stir often!

  6. I imagine this recipe could also be done very easily in a slow cooker instead of stove top.
