Can be made into a meatloaf, meatballs, or burgers, and other meats can easily be substituted for the beef. (My mother really enjoys a turkey version.)

Recipe Ingredients for Kelli's Veggie-Filled BBQ Burgers/Meatballs

1 1/2 lbs. ground beef
1/2 cup egg substitute
2 tbsp. bread crumb
1 tsp. Worcestershire sauce
2 tbsp. BBQ sauce
1/8 tsp. season salt
1/2 onion, minced
1 zucchini, minced
8 mushrooms, minced
1 red, yellow, or orange bell pepper, minced
2 garlic cloves, minced

Recipe Directions for Kelli's Veggie-Filled BBQ Burgers/Meatballs

  1. Combine wet ingredients with beef. Add in veggies (sauteed), garlic, seasonings, and bread crumbs (may substitute ground matzo or matzo meal). Cooking varies depending on form. If making meatloaf, place in oven (350 F) for 30 minutes. Check for doneness by using meat thermometer ? should reach 160 degrees. Remove from oven and let rest 15 minutes before handling.

  2. To spice it up add in your favorite hot sauce/spicy BBQ and any spices you desire. It's really great with some cayenne mixed in.
