Recipe Ingredients for Kellie's Veggie Omlet

1/2 cup green pepper, diced (sauted)
1/2 cup red pepper, diced (sauted)
1/2 cup mushroom, diced (sauted)
1 tbsp garlic, minced (sauted)
3 egg whites
1 egg
1/4 cup fat-free milk
1/2 cup tomato, diced
1 salt to taste
1 pepper to taste

Recipe Directions for Kellie's Veggie Omlet

  1. Saute all vegetables except for tomatoes in non-stick pan. Set aside. Wisk eggs and milk in a bowl then pour egg mixture into non-stick pan. Cook to desired consistancy. Plate eggs. Pour veggie mixture over eggs. Add tomatoes. Add salt and pepper to taste.

  2. Makes one serving.
