Very healthy high fiber, high protein muffins.

Recipe Ingredients for Kellie's Favorite Flax Muffins

1/2 cup unbleached flour
3/4 cup flaxseed meal
1/2 cup flax seed
1/4 cup pecans
1/4 cup almonds
1 cup raisins
1 1/2 cups carrots
2 apples
3/4 cup milk
2 eggs
1 tsp vanilla
1 cup brown sugar
1/2 tsp salt

Recipe Directions for Kellie's Favorite Flax Muffins

  1. Mix dry ingredients, shred carrotts and apples, and grind pecans and almonds. Mix everything together and put in muffin tins.

  2. Bake 350 for about 20 minutes, check with toothpick.
