Potato Cheese Casserole (From Taste of Home December 2008)

Recipe Ingredients for Kellie

4 lbs potatoes, peeled and cubed
8 oz cream cheese fat free
1/2 c butter, softened
1/4 c skim milk
1 tsp salt
1/4 tsp pepper
1 c green pepper, chopped
1/2 c cheddar cheese, shredded
1/2 c Parmesan cheese, grated
1/2 c chives
2 oz pimientos, drained and diced

Recipe Directions for Kellie

  1. Cook potatoes in boiling water until tender; drain and mash

  2. Add the cream cheese, butter, milk, salt and pepper; mix well. Stir in the green pepper, cheese, chives and pimientos. Transfer to a greased 13-in. x 9-in x 2-in. baking dish.

  3. Bake, uncovered, at 350 for 45-50 minutes or untill browned and heated through.
