Recipe Ingredients for Keera's summer time cous cous

1 1/2 cups cous cous
1 1/2 cups water, boiling
2 tbsp lemon juice
1 tbsp curry powder
1/4 cup olive oil
1/2 tsp salt
1/4 tsp pepper
1/4 tsp ginger
1/2 cup carrots, grated
1/3 cup walnuts, chopped
1/3 cup raisins
1 cup red onion
1 cup red pepper
1 1/2 cups zucchini
1 cup cherry tomatoes

Recipe Directions for Keera's summer time cous cous

  1. cook cous cous according to package directions

  2. mix lemon juice, curry powder, olive oil, ginger, salt and pepper in a bowl and set aside

  3. chop all vegetables and parsley, place in a large bowl and mix well

  4. mix in cooked cous cous

  5. add dressing and stir until well mixed

  6. Serve warm or cold
