Spinach with coconut and toor dal

Recipe Ingredients for Keerai Kootu

16 ozs spinach
4 ozs. pigeon peas, cooked
3 tsp shredded coconut
3 g dry red chili
1/4 tsp cumin seeds
20 g Urid dal
1 tsp salt
24 oz water
5 tsp olive oil
1/2 tsp black mustard seeds

Recipe Directions for Keerai Kootu

  1. Cook legumes and keep aside.

  2. Cook spinach with salt. Fry black beans, red chilis, cumin seeds and coconut in 1 tsp of oil and grind to a fine paste.

  3. Add ground paste to cooked spinach and stir.

  4. Add cooked legumes and stir and turn off heat.
