Yummy recipe from Hempola Valley; I substituted all olive oil for 1/2 Hempola oil because I didn't have any on hand. Could also use flax oil.

Recipe Ingredients for Kee Hempola Couscous Salad

1 cup couscous or bulgur
1 green pepper
1 red pepper, finely chopped
1/2 onion, red
1 cup cranberries
1 can dried beans, rinsed (black (or mixed: black, red, chick))
1/2 tsp. cumin
6 tbsp olive oil
4 tbsp balsamic vinegar
1 tbsp oregano
1/2 tbsp basil

Recipe Directions for Kee Hempola Couscous Salad

  1. Prepare couscous or bulgur as directed.

  2. Stir in chopped vegetables and cranberries and beans.

  3. Mix dressing ingredients and toss with salad.

  4. Eat right away or chill.
