Makes 4 servings



Cod, rice and eggs. This dish is both high in protein and with a reasonable amount of carbohydrate, whilst still being low fat.

Recipe Ingredients for Kedgeree

400 g cod
100 ml milk, 250ml as you will disgard rest
4 eggs
55 g onion
1 1/5 litres water
4 g curry powder
400 g basmati rice
1 tsp olive oil

Recipe Directions for Kedgeree

  1. Place the fish in milk and poach for 10 minutes. After this drain and digard the left over milk. Meanwhile hard boil the eggs fro 8 minutes, when cool shell and roughly chop. Heat the stock.

  2. In a large saucepan cook the onion in the olive oil untilsoftened then add the curry powder and rice. Stir then add stock. Bring to the boil, then turn down to a simmer until the liquid is absorbed, about 10-12 mins.

  3. When the rice is done stir in the flaked fish and add the chopped eggs.
