Rice, haddock and peas for dinner or breakfast

Recipe Ingredients for Kedgeree

175 grams long-grain rice
450 grams haddock fillets
2 hard-boiled eggs
50 grams butter
1 cup frozen peas
1/4 teaspoon cayenne

Recipe Directions for Kedgeree

  1. cook rice and spread out on a dry.

  2. put smoked haddock in frying pan with water to cover. bring to simmering point and simmer for 10-15 inutes. drain, skin and flake the fish.

  3. Chop one hard-boiled egg, slice the other and set aside. Melt butter, add rice, fish, egg and cayenne. stir over moderate heat for 5 minutes. pile on warmed serving dish and garnish with parsley and egg slices.
