This is a versatile dish, wonderful for breakfast, lunch or supper. This recipe is an excellent balance between smokey and spicy.

Recipe Ingredients for Kedgeree

1 egg
200 g cod (should by haddock but didn't recognise this)
200 g long grain rice
25 g butter
140 g onion, chopped
10 g garlic, crushed
1 tsp curry powder
2 tbsp chopped herbs
2 tsp lemon juice
1 Salt and pepper

Recipe Directions for Kedgeree

  1. Boil egg for ten minutes and leave to cool in cold water until needed.

  2. Put the haddock in a frying pan with some water and thre bay leaves, bring to the boil, cover and boil for five minutes. Remove from pan and when cool enough to handle remove the skin, flake the fish into chunks and set aside.

  3. Cook the rice in salted water for about twenty minutes then drain. Refresh in cold water. Drain again and leave it in the fridge until you need it. Melt the butter in a pan over a low heat and add the onions and garlic. Allow to soften without colouring for about five minutes, then add the curry powder and cook for a couple of minutes more.Add the juice of one lemon.

  4. Cut the hard boiled egg into wedges.

  5. Add the fish and the rice to the pan and gently heat through, then add the eggs and corriander and stir gently.

  6. Put into a warm serving dish.
