Recipe Ingredients for Kay's lentil soup

1 pound lentils
1 cup carrots, chopped
1 cup celery, chopped
3 oz spinach
8 cups water
2 cups beef broth
1 onion, chopped

Recipe Directions for Kay's lentil soup

  1. place 8 cups of water, lentils, celery and carrots and onions in large pot. Bring to a boil, reduce heat and simmer 45 minutes.Add spinach about 25 minutes into cooking.

  2. Use beef broth to thin as necessary.
