Recipe Ingredients for Kaylene's Beef Stew

1/2 c. all-purpose flour
2 tsp garlic salt, DIVIDED
1 1/2 tsp black pepper, DIVIDED
2 lbs. boneless chuck roast or stew meat, trimmed and cut into 1 1/2 in cubes
3 tsp canola oil, DIVIDED
2 med onions, sliced
28 oz diced tomatoes, drained
1 c. beef broth
3 T molasses
2 T cider vinegar
4 cloves garlic, minced
2 tsp dried thyme
1 tsp celery salt
1 tsp bay leaf
8 oz baby carrots, cut in half lengthwise
8 oz parsnips, diced
1 Salt and pepper to taste

Recipe Directions for Kaylene's Beef Stew

  1. Combine flour, 1 tsp salt and 1 tsp pepper in large bowl or ziplock bag. Toss meat in flour mixture. Heat 1 tsp oil in large skillet over medium-high heat. Add half of beef and brown on all sides. Set aside browned beef and repeat with 1 tsp oil and remaining beef.

  2. Add remaining 1 tsp oil to skillet. Add onions and cook, stirring to loosen any browned bits, about 5 minutes. Add tomatoes, broth, molasses, vinegar, garlic, thyme, celery salt, bay leaf, and remaining tsp salt and tsp pepper. (K?s note?if you think that you might not have room in the skillet for the tomatoes plus everything else, pour the tomatoes into the slow cooker and complete the rest of the instructions as written) Bring to a boil. Add browned beef and boil 1 minute.

  3. Transfer mixture to slow cooker. Cover and cook on LOW 5 hours or on HIGH 2 hours. Add carrots and parsnips. Cook 1 to 2 hours more or until vegetables are tender. Season with salt and pepper.
