Recipe Ingredients for Kayelle's Chile Relleno Casserole

32 oz grated cheddar cheese
16 oz grated monterey jack cheese
8 oz green peppers (chili diced ortega )
2 tbsp flour
1 can evaporated milk
4 eggs
1 cup Salsa (to spread on top)

Recipe Directions for Kayelle's Chile Relleno Casserole

  1. preheat oven to 350

  2. In a casserole dish 9X14 put loosly mixed cheeses in pan, make layer of green chili , then put the rest of the mixed cheese on top.

  3. Then in a blender mix the evaporated milk, eggs and flour, puree until frothy

  4. pour mixture evenly over the cheese and chilis in casserole dish, place in preheated oven for 45 Mins covered.

  5. Pull casserole out and turn oven up to 400. spread salsa on top and return to oven uncovered for approx 15 min. Check often to make sure it isn't burning... then take it out and let it stand for 30 to 45 mins until firm and then serve.

  6. It can be frozen and reheated.
