Recipe Ingredients for Kaya's Kosmic Kornbread (vegan)

2 cup spelt flour
1 cup cornmeal
3/4 cup millet
2 1/2 tbs. baking powder
3/4 tsp. salt
1/2 lb. tofu
1 1/2 cup water
3/4 cup maple syrup
1/2 cup safflower oil

Recipe Directions for Kaya's Kosmic Kornbread (vegan)

  1. Preheat oven to 350. Toast the millet, Sift the baking powder.

  2. Combine dry ingredients in a large mixing bowl and whisk well. Add wet ingredients to blender and blend until creamy.Add wet to dry and mix well.

  3. Pour into parchment paper-line 9" by 9" baking pan and bake until toothpick comes out clean, approximately 45 minutes, or until top browns and cracks appear.

  4. NOTE: can use quinoa instead of millet, and agave instead of maple syrup. Also, the book has a bunch of variations listed- southwest, blueberry, cranberry walnut.
