Scrambled eggs with tomato, with added ham & cheese

Recipe Ingredients for Kayana with Ham & Parmesan

4 medium eggs
1 large tomato
65 g
3 tbsp grated parmesan

Recipe Directions for Kayana with Ham & Parmesan

  1. Puree tomato in food processor, then drain as much water as possible.

  2. Beat eggs in a bowl, add parmesan and blend together.

  3. Heat a non-stick frying pan and place drained tomato in it. Cook over high heat until almost all its juices are gone.

  4. Cut ham into small squares and add to tomato, stirring with a wooden spoon.

  5. When the tomato mix is almost dry, add the egg & parmesan.

  6. Cok the omelet for approx 8 mins over high heat, constantly scrambling. When egg is throughly cooked, remove from heat. Serve hot.
