Kale and eggs mixed with your favorite pasta and topped with a bit of parmesan cheese makes a delicious meal. Using Organic Brown Rice Pasta allows for a Gluten-Free dish.

Recipe Ingredients for Kavolo Uovo Pasta

2 egg, raw []
4 cups kale, raw, chopped[]
1 1/2 oz noodles, fettucini, Organic Brown Rice[]
1 tbs parmesan cheese, shredded []

Recipe Directions for Kavolo Uovo Pasta

  1. Cook 1 1/2 oz per serving, of fettucini pasta al dente.

  2. Wash and chop kale, 4 cups per serving. Spray oilive oil lightly on bottom of medium high skillet and toss the moist chopped kale in the pan.

  3. Stir kale to get it all beginning to darken in color. Cover and lower heat to medium.

  4. Stir kale after two minutes and repeatedly until it is wilted and tender.

  5. Remove kale from pan and keep warm.

  6. Spray olive oil on same skillet and fry two eggs per serving. You can poach eggs if preferred. Be sure not to over cook the yolks. The soft yolks become the cream sauce on the pasta.

  7. When pasta and eggs are done, combine them with the kale on a serving plate. Slice through the eggs to break the yolks and cut the eggs into bite size pieces.

  8. Toss together like a salad on plate.

  9. Garnish with parmesan cheese.
