Recipe Ingredients for Katzen Stuffed Peppers w/bulgur-pine nut pilaf

2 T olive oil
1/2 c bulgur
1/4 c pine nuts
1 T lemon juice
2 T minced chives
1 t dill
4 bell peppers

Recipe Directions for Katzen Stuffed Peppers w/bulgur-pine nut pilaf

  1. heat 1 T oil in a small skillet with a tight fitting lid.

  2. add uncooked bulgur and pine nuts.

  3. saute over medium heat stirring constantly for 5 minutes, or until it gives off a toasty smell.

  4. pour in 1/2 c boiling water and place lid on pan.

  5. let stand for 30 minutes.

  6. stir in the second T of olive oil, lemon juice and salt to taste.

  7. add chives, dill (and if desired, 1 T currants).

  8. fill each pepper with 1/2 c of pilaf and bake for 35 minutes on a lightly oiled baking sheet at 375 degrees.

  9. serve hot or warm.
