Recipe Ingredients for Katzen Frittata w/Peas and Goat Cheese

4 large eggs
3 T feta
2 t olive oil
3 T scallions
3/4 c peas
1/2 t garlic

Recipe Directions for Katzen Frittata w/Peas and Goat Cheese

  1. Preheat broiler to 500.

  2. Wisk together eggs with 1.5 T cheese, mint (if using) salt and pepper.

  3. Place a cast iron pan over medium heat, add oil then minced scallions and peas.

  4. Saute for 2 minutes, then add garlic.

  5. Pour in egg mixture, wait 30 seconds, then loosen edges and swirl pan.

  6. Allow to sit for 5 minutes off the heat, then sprinkle on remaining cheese and transfer to the oven for 2 to 3 minutes (until golden).

  7. Remove from oven and sit for another minute, loosen egg and flip onto plate.
