1/2 bell pepper is 4.5 weight watcher points

Recipe Ingredients for Kat's Stuffed Bell Peppers

8 bell peppers
2 cups Diced Onions
1 cup Diced Celery
1 cup Chopped Cilantro
15 oz Black Beans
1 cup brown rice
1 lb Lean Ground Turkey
1 cup Egg Beaters
1 cup Reduced Fat Mozzarella
15 oz stewed tomatoes

Recipe Directions for Kat's Stuffed Bell Peppers

  1. cut bell peppers in half -removing any veins

  2. saute onion and celery - let cool

  3. mix- onions, celery, cilantro, black beans, corn, turkey, egg beaters, 1/2 mozzerella

  4. Stuff mixture into 1/2 peppers

  5. place in deep baking dish -meat side up

  6. pour stewed tomatoes over

  7. bake 350 for 45 minutes

  8. sprinkle with remaining cheese

  9. bake until cheese is bubbly and peppers are tender
