Recipe Ingredients for Kat's Bean Salad

30 ounce kidney beans
1 large tomato
1 1/2 cups diced cucumber
1 cup parsley
3 tablespoons extra virgin olive oil
1/2 cup lemon juice
1/2 tsp sea salt

Recipe Directions for Kat's Bean Salad

  1. Drain and rinse beans under cold water.

  2. Combine beans, diced tomatoes and cucumber and chopped parsley in a bowl. Mix dressing ingredients in another bowl and drizzle over salad. Toss to coat. Allow to sit for at least 10 mins. Gets better the longer it sits.
