Recipe Ingredients for Katie's Spicy Tomato, Leek & Chickpea Soup

3 cup Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds
2 cup Leeks, (Bulb And Lower Leaf-portion)
4 oz Celery
4 oz Carrots
48 oz Tomatoes, Red, Ripe
2 cup Light
1 tsp Cumin
1 tsp Chili Powder
1 tsp Salt Substitute
2 oz Cilantro
1 pepper Peppers, Jalapeno
1 tbsp Olive Oil
2 tsp Garlic

Recipe Directions for Katie's Spicy Tomato, Leek & Chickpea Soup

  1. Add garlic, leeks and olive oil to a large pot and saute over medium heat for a couple minutes.

  2. Add all other veggies except jalapeno and cilantro.

  3. Cook covered over medium-low heat for about 20 minutes.

  4. Deseed jalapeno, finely dice it along with cilantro (okay to include stems) and add along with spices.

  5. Cook covered for another 20 minutes.

  6. If you prefer a thick soup, you can pulse it through the food processor or blender but we ate it as is.
